Also known to some as banghaar, Tarka is basically the process of frying/tempering a bunch of spices in oil or ghee. Using spices such as fenugreek, fennel seeds and mustard seeds, the spices will begin to pop and sizzle, releasing that gorgeous aroma and flavor.
- 250g mixed daal (inc all yellow daal, & red daal) rinsed until the water runs clear
- 2 bay leaves
- 3 cardamom pieces (long)
- 3 piece Green Cardamom Pods Spice (Hari elaichi)
- garlic ginger paste
- 1spn of Cumin seeds
- 5 pieces red chili whole (round shaped)
- 2 tomatoes
- 1 tsp ground coriander
- 1 tsp cumin powder
- 1 tsp turmeric powder
- 1 tsp of red chili powder
- 4 tbsp of heavy cream
- 3 tbsp butter
- 1 cup of Vegetable oil
- salt to taste
